Fiesta Salad


Tantalizing and vibrant, this salad will refresh and nourish everyone on a hot summer’s day. Serves 4 to 6.

Ingredients:
1 can whole corn, rinsed or 1 ½ cup fresh corn
1 cup black beans, rinsed well (more if you like!)
4 green onions, diced
1 jalapeno or sarreno pepper, minced
1 avocado, pitted, peeled and diced
1 orange or red bell pepper, seeded, chopped
2 tomatoes, seeded and chopped
½ cup chopped cilantro
1 lime, juiced
1/3 cup Italian salad dressing
½ Teaspoon garlic salt
1 ½ Tablespoon pimentos (opt)
¼ Teaspoon red pepper flakes (opt)

Rinse beans and corn well, and toss in a large bowl with all the remaining ingredients!
